Физиологические аспекты образования андростенона в жировой ткани некастрированных самцов свиней

Реферат:
Андростенон – соединение, которое накапливается в жировой ткани некастрированных самцов свиней и вызывает «запах хряка». Высокие концентрации андростенона негативно сказываются на вкусовых свойствах мяса, поскольку придают ему сильно выраженный запах и привкус, ассоциирующийся с запахом «мочи»/«пота». В обзорной статье рассмотрены основные механизмы образования андростенона и физиологические факторы, способствующие накоплению андростенона в жировой ткани некастрированных свиней. Отмечено, что появление «запаха хряка» главным образом связано с половой зрелостью животного, которая, в свою очередь, достигается в зависимости от возраста, убойного веса, породы и условий содержания.

Summary:
Androstenone is a compound that accumulates in fatty tissue of entire male pigs and causes boar taint. High androstenone concentrations negatively affect meat palatability as they impart pronounced odor and off-flavor associated with odor of urine or sweat. The review paper examines the main mechanisms of androstenone formation and physiological factors facilitating androstenone accumulation in fatty tissue of entire male pigs. It is noted that appearance of boar taint is mainly linked with sexual maturity of an animal, which in turn is reached depending on age, slaughter weight, breed and housing conditions.
