Реферат:
Обзорная статья посвящена обсуждению актуальности применения альтернативных методов снижения «запаха хряка» при выращивании самцов свиней в промышленных масштабах. Приведены результаты исследований групп учёных, касающиеся решения вопросов влияния различных факторов, предотвращающих появления постороннего запаха при иммунологической кастрации, а также в процессе выращивания некастрированных животных при определённых условиях содержания и откорма. Основными факторами, влияющими на образование андростенона в мясном сырье, являются генетические особенности животных, возраст и стрессовые состояния. В отношении накопления соединений скатола и индола важную роль играют внешние факторы, такие как санитарно-гигиенические условия, продолжительность светового дня и рацион кормления.

Summary:
The review paper is devoted to discussion of the topical problem of using alternative methods for boar taint reduction when raising male pigs at the industrial scale. The research results of scientific groups are presented regarding the solution to the questions of an effect of various factors preventing the appearance of off-odor upon immunological castration as well as during raising entire males in certain conditions of keeping and feeding. The main factors influencing the androstenone appearance in meat raw materials are genetic peculiarities, age and stress conditions of animals. With respect to the accumulation of skatole and indole, an important role is played by external factors such as sanitary and hygienic conditions, daylight duration and a diet.
