Разнообразие микроорганизмов порчи на поверхности тушек птицы в процессе хранения

Проведено исследование видового разнообразия поверхностной микрофлоры тушек птицы на фоне влияния надуксусной кислотой (НУК) в сочетании с кислородопроницаемой упаковкой. Образцы хранили при 2 °C в течение 12 суток и определяли количество МАФАнМ с последующей идентификацией микроорганизмов методом масс-спектрометрии на приборе MALDI BiotyperMicroflex. В течение всего периода хранения микрофлора тушек птицы была представлена в значительной степени различными видами Pseudomonas spp.. Кроме этих Грамотрицательных микроорганизмов присутствовали бактерии семейства Enterobacteriaceae: Proteus vulgaris, Escherichia coli, Hafnia alvei. Также были выявлены бактерии Aeromonas popoffii, Acinetobacter johnsonii и Chryseobacterium indologenes. Из Грамположительных микроорганизмов на поверхности тушек птицы обнаружены бактерии Carnobacterium maltaromaticum, Lactobacillus sakei и Rhodococcus erythropolis. Выявленные Грамотрицательные микроорганизмы в основном являются микроорганизмами порчи. Новые данные о микрофлоре птицы позволят в дальнейшем прогнозировать сроки годности и управлять микробиальной порчей.


Diversity of spoilage microorganisms on the surface of poultry carcasses during storage

Summary:
In this study, the species diversity of the microflora on the surface of poultry carcasses was studied against the background of the antimicrobial effect of peracetic acid (PAA) in combination with oxygen permeable packaging. The samples were stored at 2 °C for 12 days; the quantity of mesophilic aerobic and facultative anaerobic microorganisms (QMAFanM) was determined, followed by identification using mass spectrometry on a MALDI BiotyperMicroflex instrument. During the storage period, the microflora was represented by various Pseudomonas species. In addition to these Gram-negative bacteria, bacteria of the Enterobacteriaceae family were present: Proteus vulgaris, Escherichia coli, Hafnia alvei. The bacteria Aeromonas popoffii, Acinetobacter johnsonii and Chryseobacterium indologenes were also identified. Among Gram-positive microorganisms, bacteria Carnobacterium maltaromaticum, Lactobacillus sakei and Rhodococcus erythropolis were found on poultry carcasses. Gram-negative microorganisms found in the samples were mainly spoilage microorganisms. Having the understanding of spoilage-causing contaminants, their sources and a spoilage mechanism, it will be possible to preserve the quality and extend the shelf life of poultry meat.
