Способы снижения образования гетероциклических ароматических аминов в мясной продукции

Реферат:
Представлен обзор исследований по вопросу снижения накопления ГАА в мясной продукции. Показано, что ключевое влияние снижения количества ГАА возможно путём воздействия на прекурсоры ГАА, изменения режимов термической обработки и рецептуры мясной продукции. Одними из основных прекурсоров являются углеводы, которые могут являться как катализатором, так и ингибитором в реакции образования ГАА. Проведен анализ влияния температуры обработки и длительности процесса термообработки на количество ГАА. Важную роль в реакции образования ГАА играют свободные аминокислоты, содержание влаги и влагоудерживающая способность сырья. Внесение в рецептуру витамина Е и экстракта розмарина приводит к сильному ингибирующему эффекту в реакции образования ГАА. Описан ингибирующий эффект экстракта семян граната, экстракта артишока. Изучено влияние замены животного жира растительными маслами на количество образующихся ГАА. Описанные работы позволили определить направление дальнейших исследований по использованию в рецептуре мясных продуктов веществ, обладающих антиоксидантной активностью.

Summary:
A review of studies on reducing the accumulation of GAA in meat products is presented. It is shown that the key effect of reducing the amount of HAA is possible by influencing HAA precursors, changing the modes of heat treatment and the formulation of meat products. The main precursor is sugar, which can be both a catalyst and an inhibitor in the HAA formation reaction. The analysis of the influence of the processing temperature and the duration of the heat treatment process on the amount of HAA is carried out. Free amino acids, moisture content and VEG of raw materials play an important role in the reaction of HAA formation. The addition of vitamin E and rosemary extract to the formulation leads to a strong inhibitory effect in the reaction of HAA formation. The inhibitory effect of pomegranate seed extract, artichoke extract has been proven. The effect of replacing animal fat with vegetable oils on the amount of formed HAA has been studied. The described works made it possible to determine the direction of further research on the use of substances with antioxidant activity in the formulation of meat products (sea buckthorn, blueberries, grapes, cranberries, mountain ash, black chokeberry, currant, mangosteen).
