Рассмотрены современные методы моделирования желудочно-кишечного тракта для изучения биологической активности пептидных соединений, образующихся в процессе переваривания. Авторами предложена модель пищеварения in vitro для изучения физиологических эффектов пищевых продуктов функциональной и специализированной направленности, а также биологически активных добавок.

Summary:
The article deals with modern models of gastrointestinal tract to study biological activity of peptide compounds formed during digestion. The authors propose digestion model in vitro to study functional and specialized food products physiological effects, as well as biologically active additives.
