Исследование эмульгирующей способности мясных систем, содержащих растительный компонент для производства паштетов

Представлены результаты исследования фракционного состава и эмульгирующей способности белковых фракций печени куриной, мяса птицы механической обвалки, кожи куриной, печени свиной. Эмульгирующую способность белковых мясных объектов изучали как по отдельности, так и в комбинации с растительным белком кедрового жмыха. Изучено влияние концентрации хлорида натрия и фосфатного препарата на эмульгирующую способность белковых фракций исследуемых объектов. Установлено, что наибольшей эмульгирующей способностью обладают белки печени, а наименьшей куриная кожа. При комбинировании мясного сырья с кедровым жмыхом установлена тенденция повышения функциональных свойств систем. Добавление хлорида натрия в концентрации от 1,0 % до 2,0 % не оказывает существенного влияния на эмульгирующую способность исследуемых объектов. Внесение в комбинированные системы 0,2 % фосфатов приводит к улучшению функциональных свойств белков комбинированной системы. Полученные результаты исследований следует учитывать при разработке рецептур эмульгированных мясных изделия с использованием мяса птицы механической обвалки, субпродуктов, кожи птицы и, в частности, при изготовлении паштетов.

Summary:
The results of the study of fractional composition and emulsifying ability of protein fractions of chicken liver, poultry meat mechanical boning, chicken skin, pork liver. Emulsifying ability of protein meat objects was studied both separately and in combination with plant protein of cedar cake. The influence of the concentration of sodium chloride and phosphate preparation on the emulsifying ability of protein fractions of the studied objects was studied. It was found that the greatest emulsifying ability have liver proteins, and the smallest chicken skin. When combining meat raw materials with cedar cake, the tendency of increasing the functional properties of the systems is established. The addition of sodium chloride in the concentration from 1.0 % to 2.0 % has no significant effect on the emulsifying ability of the studied objects. The addition of 0.2 % phosphates to the combined systems improves the functional properties of the combined system proteins. The results of the research should be taken into account in the development of formulations of emulsified meat products using poultry meat mechanical deboning, by-products, poultry skin and, in particular, in the manufacture of pates.
